Ingredients:

Directions:

  1. Fry bacon in skillet until crisp then remove from skillet and reserve.
  2. Add onions to skillet then cook until tender but not brown.
  3. Add zucchini, potatoes, salsa, sugar and cumin then cook over medium high heat.
  4. Stir frequently until vegetables are crisp tender about 7 minutes.
  5. Stir in tomato and reserved bacon then heat through and top with sour cream.
