Ingredients:

Directions:

  1. First, brown the pork in a deep frying pan. After the pork has browned, add the onions, garlic, green bell pepper, jalapeno, roasted red peppers and sauté for about 10 minutes. Add the Mexican seasoning and sauté for another 10 minutes; next deglaze the pan with the chicken stock until all of the brown bits come up from the bottom of the pan. Next add the rinsed black beans, cilantro and soy sauce, (if you are using) and salt and pepper to taste. Simmer the meat mixture for about another 10 minutes. At this point you can set aside until cooled then refrigerate for at least 2 hours. You can prepare the meat mixture a day ahead to allow the spices and herbs blend together to achieve a deeper flavor.
  2. When you are ready to make the egg rolls, just follow the instructions on the egg roll package which has a diagram on how to roll it properly. Use about 2 tbls of the meat mixture and start rolling. I purchased a 16oz. package of Wing Hing Foods Egg Roll
  3. Wraps. Whatever brand you choose, should have the rolling instructions on the package. Deep fry the egg rolls in peanut oil or canola oil, (I used canola oil).
  4. Dipping sauce:
  5. 2 cups of Ranch Dressing
  6. 1/2 cup of diced tomatoes
  7. 1/2 cup onions, diced
  8. 1/2 cup jalapenos, finely chopped
  9. 2 tbls cilantro, finely choped
