Ingredients:

  • crust
  • 1 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • filling
  • 1/3 cup firmly packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. salt

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine 1 1/4 cups flour, butter and sugar in large mixer bowl.
  3. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs (1-2 min.).
  4. Stir in 1/4 cup pecans.
  5. Press crust mixture evenly onto bottom of ungreased 8 or 9-in. square baking pan.
  6. Bake 18-22 minutes or until very lightly golden brown on edges.
  7. Combine all filling ingredients EXCEPT pecans in a small bowl; mix well.
  8. Stir in pecans.
  9. Spread evenly over hot, partially baked crust.
  10. Bake for 20-30 minutes or until filling appears set and knife inserted 1-in. from edge comes out clean.
  11. Cool; cut into bars.
