Ingredients:

  • 1/2 cup oleo
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 cups flour
  • 1/2 cup sugar
  • 2 tsp cinnamon

Directions:

  1. Cream oleo and brown sugar.
  2. Add egg and beat well.
  3. Add rest of ingredients. Fold in rhubarb.
  4. Combine sugar & cinnamon and sprinkle over top of batter before baking.
  5. Bake at 350 for 30-40 minutes.
