South Africa Vegetable Curry

Ingredients:

Directions:

  1. Slice carrots 1/2 inch think.
  2. Cut green beans into 1 1/2 inch pieces.
  3. Cut pepper and peaches into 1 inch pieces.
  4. Cut cauliflower into 1 1/2 inch florets.
  5. In a 6 quart pan, saute onion, ginger, garlic and cinnamon sticks in oil about 5 minutes or until onion is limp.
  6. Add curry powder and turmeric, stirring for 30 seconds.
  7. Add all remaining ingredients except salt.
  8. Bring to a boil.
  9. Cover and simmer for 20 to 25 minutes.
  10. Add salt.
