Ingredients:

  1. Drain fruits and sprinkle on 1 cup sugar - continue to let fruit drain.
  2. Sift together flour, 1 cup sugar, baking powder and salt.
  3. Add eggs,vanilla, chopped pecans and dates.
  4. Mix well and bake in a greased and floured 9 X 13 inch pan at 350 degrees until toothpick comes out clean
  5. When cake is done and cool, build a mountain with: Chunky baked cake crumbs,fruit, cake crumbs, fruit, etc.
  6. Then top with a very generous amount of sweetened whipped cream or large tup of Cool Whip, into which you have
  7. Mixed 1 cup shredded coconut.
  8. Note : Choose a large attractive serving dish to build the cake on and for presentation!
