Ingredients:

Directions:

  1. Spray 12-inch nonstick skillet with cooking spray; heat over medium heat.
  2. Sprinkle both sides of chicken with oregano, salt, garlic powder, pepper, and red pepper.
  3. Cook in skillet 8 to 10 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
  4. Remove chicken from skillet; keep warm.
  5. Melt butter in skillet over medium heat.
  6. Cook bell pepper and onion in butter about 5 minutes, stirring occasionally, until crisp-tender.
  7. Stir in mushrooms.
  8. Cook 3 to 5 minutes, stirring occasionally, until vegetables are tender.
  9. Place chicken in skillet.
  10. Spoon vegetables over chicken.
  11. Sprinkle cheeses over chicken and vegetables.
  12. Remove from heat.
  13. Cover and let stand until cheese is melted.
