  1. Preheat oven to 300 degrees. In a small bowl combine salt, paprika, cumin, cinnamon, and pepper. Sprinkle pork with spice mixture, then sprinkle with 2 TBSP cocoa powder.
  2. Brown pork on all sides in large dutch oven over medium heat then transfer to platter. Add onions and garlic to pan and cook for 2 minutes. Add orange juice, the 1/4 cup of cocoa powder, and 4 cups stock. Return pork to pan, completely submerged. Cover and place in oven 3 1/2-5 1/2 hours. Remove pork to serving platter, strain liquid, and return to pan. Cook on high heat 10 minutes to concentrate flavors. Sprinkle pork with parsley.
