Ingredients:

Directions:

  1. Put a dutch oven over medium heat.
  2. Add butter, onions, and celery and a pinch or two of salt - sweat onions and celery until they are translucent
  3. Add flour, sprinkling evenly over celery and onions, stir until flour is fully mixed in
  4. Add broth, bring to a boil, pepper as desired
  5. Add potatoes, cover, and lower heat to a simmer, allow potatoes to cook for 10 minutes
  6. Add sausage, allow to cook for 10 minutes
  7. Make sure the soup to this point is at a low simmer and add the milk, stir
  8. Add cheese, a handful at a time while stirring, and allow each handful to melt into the soup
  9. Check the taste, adjust salt/pepper and leave on low heat until ready to serve
