Ingredients:

  • 2 cups flour
  • 1/3 cup sugar
  • 1/4 tsp baking soda
  • 1/2 cup margarine
  • 1/2 cup plain yogurt
  • 1 egg

Directions:

  1. Adjust rack to lower-middle position and preheat oven to 400 degrees.
  2. In a medium bowl, mix flour, sugar, baking powder, and baking soda. cut butter in with pastry cutter, then stir in raisins.
  3. In a small bowl, whisk together yogurt and egg until smooth
  4. Using a fork, stir yogurt mixture into flour mixture until large dough clumps form. use your hands to press the dough against the bowl into a ball. (the dough will be sticky, and there may not seem to be enough liquid at first, but the dough will come together as you press).
  5. Scoop piles of dough onto cookie sheet and sprinkle with some sugar. bake until golden - 13 minutes. cool for 5 minutes and serve warm or at room temperature.
  6. CRANBERRY ORANGE SCONES- follow the recipe, adding a generous teaspoon of finely grated orange rind to the dry ingredients and substituting dried cranberries for the raisins.
  7. LEMON BLUEBERRY- SCONES- follow the recipe, adding two teaspoons of lemon zest to the dry ingredients and substituting frozen blueberries for the raisins.
  8. CHERRY ALMOND SCONES- follow the recipe, adding 1/2 tsp of almond extract to the dry ingredients and substituting dried cherries for the raisins.
