  1. Prepare the vegetables. It may not be necessary to peel the potatoes depending on the variety you choose, but do peel the carrots (except baby carrots). Combine all ingredients in a 3-1/2 quart crockpot. Add salt and pepper to taste.
  2. Cover and cook on LO heat for 8 hours.
