Simple Grilled Herb And Olive Oil Bread

Ingredients:

  • loaf of good (and fresh) crusty french or italian bread - this is key - don'tsp use poor quality or day old . . .
  • white pepper (optional)
  • fresh herbs ( basil or parsley are best - rosemary and sage are also good)

Directions:

  1. Heat grill (ensure it is clean!) - start on high
  2. Slice bread to 1/2” thickness
  3. Lay slices flat
  4. Coarsely chop your herbs and set aside
  5. Mix Olive Oil, Balsamic vinegar, Dried Basil, White Pepper in mixing bowl
  6. Whisk ingredients until oil and vinegar are well mixed
  7. Baste each slice with mixture until well coated, but do NOT saturate.
  8. Flip each slide and do the same (TIP: Re-whisk your mixture as the oil and vinegar will separate - you do not want someone to get a vinegar slice . . . ) - keep any left-over mixture for basting on grill if needed
  9. Sprinkle coarsely chopped herbs on one side of your slices - keep rest for later and bring to grill with you
  10. Turn the grill to medium heat
  11. Set you slices - herb side up on grill
  12. Stand by - each side takes only a couple of minutes pending hot zones of your grill - you want a golden brown color
  13. Flip each slice and sprinkle additional herbs as desired, baste with mixture of desired as well
  14. Remove from grill and serve
