Silken Tofu and Carrot with Soy-Ginger Sauce

Ingredients:

  • 1 1/2 tbsp soy sauce
  • 3/4 tsp finely grated peeled fresh gingerroot
  • 3/4 tsp sugar
  • 1 small carrot
  • 1/2 lb silken or soft tofu
  • 1 tbsp thinly sliced scallion greens

Directions:

  1. In a small bowl stir together soy sauce, vinegar, gingerroot, and sugar until sugar is dissolved. Peel and finely grate carrot. Carefully drain and halve tofu. Put tofu on 2 plates and spoon sauce over it. Top tofu with carrot and scallion.
