Ingredients:

  • 1 lb medium shrimp
  • 1 1/2-2 cups white wine
  • 3 tbsp minced shallots (optional but adds great flavor)
  • 2 -3 tbsp lemon juice (depends on your lemon preferences)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 tsp thyme
  • 1/2 tsp salt

Directions:

  1. Peel and devein shrimp leaving tail portion on.
  2. Heat butter and oil in large skillet over med-high heat.
  3. Add garlic and shallots and cook up to 3 minutes until tender. If they start turning brown, reduce to medium heat if needed.
  4. Add shrimp, lemon, salt, wine.
  5. Wait till it bubbles and simmer for 2-3 minute or until shrimp turn opaque. Stir occasionally.
  6. Remove shrimp and set aside.
  7. Continue cooking liquid until it is reduced and thickened (takes about 15 minutes).
  8. Stir in parsley and thyme, cook 1 minute.
  9. Add shrimp back to mixture, toss to coat, taste and season accordingly with extra salt & pepper if needed.
  10. Serve immediately.
