Shrimp and Soy Sausage Casserole

Ingredients:

Directions:

  1. Cover shrimp in large collander fitted into larger bowl with lukewarm water (if frozen) and let sit for 10 minutes. Remove tails, rinse, and set aside.
  2. Prepare tomatoes, onions, ginger, corriander, and spinach as seen above and set aside. Fry soy sausage in small skillet with 1 tablespoons vegetable oil until browned (about 8 min.), then remove from heat.
  3. In a medium saucepot, combine 2 tablespoons oil, ginger, and onions then fry over high heat until sauteed. Add all seasonings (except salt), tomatoes, spinach and cilantro. Cook for 2 minutes.
  4. Pre-heat oven to 375 degrees.
  5. Add shrimp, soy sausage, sweet peas, sour cream, and 1 teaspoon salt. Cover, cook over medium heat, stirring ocassionally. Cook for 10 minutes.
  6. Combine flour, milk, 1 tablespoon oil, and 1 teaspoon salt in small bowl and stir. Adjust ingredients until biscuit dough consistentcy is attained. Spread onto glass bakeware (at least 1 inch tall) with spoon until 1/4 inch layer is formed. Create lip about 1 inch up the sides of the glass. Add cooked ingredients directly on top of dough. Cover with shredded cheese.
  7. Add to oven, bake about 10-15 minutes or until bottom is golden-brown. Serve warm.
