Ingredients:

Directions:

  1. Preheat oven to 400 degrees F.
  2. Boil potatoes till done (poke with fork) and drain. Mash potatoes and add milk and butter, salt and pepper to taste (you may need less milk depending on how dry the potatoes are. You want it wet, but not loose, as it will still bake for 20 minutes.) Set aside.
  3. Boil carrots till JUST cooked. Drain and set aside in a bowl of ice water.
  4. Brown ground beef in skillet. Drain (reserving 3 T liquid) and set aside.
  5. Take 1 T of liquid and saute onions and corn. Set aside.
  6. Take remaining liquid and add flour and broth, whisking till combined. Heat in skillet, still whisking, till it thickens.
  7. Add beef, carrots, corn, garlic powder, and onions to skillet. Add salt and pepper to taste and simmer for 5-10 minutes.
  8. Place meat mixture into medium-large casserole dish. Top with mashed potatoes.
  9. Bake for approx 20 minutes. Let sit for 10 minutes before serving.
