Sesame Whole Wheat Soda Bread

Ingredients:

  • 2 1/2 cups whole wheat flour
  • 1 -1 1/3 cup white flour
  • 1 1/2 tsp salt
  • 1/4 cup butter
  • 2/3 cup rolled oats
  • 1 1/3 cups buttermilk

Directions:

  1. Combine the first 5 dry ingredients EXCEPT for 1/3 cup of the white flour.
  2. Add the butter, cut into bits, and cut into the dry mixture until it resembles coarse meal.
  3. Add oats and sesame seeds and mix again.
  4. Add the buttermilk gradually.
  5. Stir until it all forms a ball.
  6. Turn the dough out on a floured surface.
  7. Knead in the reserved white flour, as much as needed to make a soft dough.
  8. Divide dough into fourths.
  9. Shape each quarter into a round mini-loaf and flatten just a bit.
  10. Spray baking sheet with cooking spray and arrange mini loaves.
  11. Cut the top of each loaf with a shallow x .
  12. If you wish, you may brush the tops with more buttermilk and sprinkle with more sesame seeds.
  13. Bake at 425 for 15-20 minutes, until lightly browned.
  14. Cool and serve.
