Scandinavian Crisp Bread

Ingredients:

  • 1 1/2 cups flour
  • 1 cup rye flour
  • 2 tbsp brown sugar
  • 1/4 tsp salt
  • 1/4 cup butter
  • 1/2 cup water

Directions:

  1. Stir togethre in a mixing bowl flours, sugar, seeds, baking powder and salt until thoroughly blended.
  2. Cut in shortening until coarse crumbs form.
  3. Add water all at one time. Stir until mixture can be gathered in a ball.
  4. Turn onto lightly floured surface.
  5. Knead 8-10 strokes.
  6. Divide dough into six portions and shape into balls.
  7. Roll each ball of dough on a floured surface to an 8 inch round.
  8. Cut a 1 inch hole in center of each round.
  9. Prick each entire circle of dough with fork.
  10. Place rounds on greased baking sheet.
  11. Bake at 325 degrees for 15 minutes.
  12. Turn bread over and bake for 7-8 minutes more until crisp.
  13. Cool on rack.
  14. To serve, break cracker bread, butter and serve with thin sliced cheese.
