Crisp Rosemary-Parmesan Garlic Bread

Ingredients:

Directions:

  1. Blend butter and rosemary in processor.
  2. Gradually add oil and process until incorporated.
  3. Mix in Parmesan cheese.
  4. (Can be made 1 day ahead. Cover and refrigerate; bring to room temperature before continuing.)
  5. Mix in garlic.
  6. Cut the baguette in half lengthwise, then crosswise (4 pieces total).
  7. Score each piece diagonally 3/4-inch deep at 1 1/2-inch intervals.
  8. Prepare barbecue (medium-high heat) or preheat oven to 400°F
  9. Spread cheese mixture over cut sides of bread.
  10. If grilling, wrap each piece of bread loosely in foil.
  11. Grill in foil until bread is crusty and golden, about 8 minutes.
  12. If baking, place bread cut side up on baking sheet.
  13. Bake until bread is crisp and golden around edges, about 10 minutes.
  14. Serve bread warm.
