Ingredients:

  • savory vegetable chowder
  • servings: 6 / prep time: 15 minutes. / cook time: 1 hour
  • 1 lb ground round
  • 1 (14.5 oz.) can red gold petite diced tomatoes mexican fiesta
  • 2 medium carrots, diced
  • 1/2 cup diced celery
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups water
  • 1/3 cup long grain rice

Directions:

  1. In a large soup kettle brown the ground round in oil.
  2. Add remaining ingredients, except rice.
  3. Cook over low heat for 30 minutes.
  4. Add rice and cook an additional 30 minutes or until rice is done.
  5. Add more tomato juice if soup is too thick.
