Sausage With Warm Vinaigrette

Ingredients:

Directions:

  1. Cook sausage as directed.
  2. Remove sausage when fully cooked and set aside leaving your pan on same heat.
  3. Mix together oil, viniger, and mustard and put in pan.
  4. Deglaze the pan with a whisk breaking up the mustard till sauce is even, scraping up all the dark pieces.
  5. Place sausage back in pan, cover with sauce, remove from heat and keep warm.
  6. Cook spinach as directed.
  7. Melt butter with lemon juice and mix with spinach.
  8. Season with salt and pepper.
  9. Serve sausage over spinace with sauce and parmisean cheese.
