Ingredients:

Directions:

  1. In a large skillet, cook bacon over medium high heat until crisp.
  2. Drain on paper towel.
  3. Discard all but 1 Tbls bacon fat.
  4. Rinse and seed peppers.
  5. Cut into strips.
  6. In skillet with bacon fat, add onion and peppers.
  7. Saute over medium heat for about 5 minutes.
  8. Add chicken and spices.
  9. Cook, stirring, for about 15 minutes or until chicken is cooked through.
  10. Crumble bacon and sprinkle on top.
  11. Sprinkle with chopped parsley, spoon into warm tortillas and serve immediately.
  12. Note: These are also good if you add shredded cheddar cheese to the tortilla.
