Ingredients:

Directions:

  1. Put beans in bowl and cover with warm water, set aside until water comes to room temperture
  2. Drain beans, than cook in a gallon of boiling salted water until done, 3-5 minutes - Beans are done with they still have a slight raw flavor but are crisp and bright green
  3. As soon as done, remove and shock in ice water, drain
  4. Place beans and remaning ingredients in large saute pan and place over medium-high heat
  5. Saute, stirring occasionally, until water evaporates, butter coats beans and cooks shallots, 1-2 minutes
  6. Adjust seasoning to taste
