Salmon with Balsamic onion Marmalade

Ingredients:

  • 2 tsp olive oil
  • 1/2 cup orange juice
  • 12 oz salmon
  • 1 pinch salt and pepper

Directions:

  1. Peel onion and cut into 8 wedges.
  2. Pour 1 teaspoon oil into 2 quart pan. When pan is hot add onion and cook turning once, to lightly brown(about 5 minutes)
  3. Add OJ and vinegar. Bring to a boil over hight heat then reduce heat cover and simmer until onion is tender(about 45 minutes).
  4. Shortly before onion is done, pour remaining oil into nonstick frying pan over med-high heat. Cook salmon turning once, until fish is opaque but moist.
  5. Serve with onion mixture.
