Salmon, Asparagus, Broccoli, and Orzo Salad

Ingredients:

  • 6 cups water
  • 213 g asparagus
  • 250 g broccoli
  • 1 1/2 lb salmon fillet
  • 4 tbsp lemon juice
  • 2 tbsp olive oil

Directions:

  1. Mix olive oil, mustard and lemon juice for dressing
  2. Season salmon fillet with salt and pepper and broil for about 10 minutes, or until flakey
  3. Bring water to a boil and boil broccoli and asparagus for 3 minutes and then rinse in ice water to stop cooking
  4. Cook orzo according to directions on the box without salt or fat
  5. Mix everything together and serve
