Ruth's Oatmeal Raisin Cookies With Coconut

Ingredients:

  • 1 cup butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1 pinch salt
  • 2 cups oatmeal
  • 1 cup raisins

Directions:

  1. Preheat oven to 350°F.
  2. Beat together butter and brown sugar until well blended.
  3. Add eggs, one at a time, and vanilla.
  4. In a separate bowl, sift together flour, soda, powder, and salt.
  5. Slowly add flour to butter mixture, until well blended.
  6. Blend in coconut, raisins and oatmeal.
  7. Shape into 1 inch balls and press onto cookie sheet.
  8. Bakeat 350F for 8 minutes.
