Ingredients:

  • 3 lb salt water fish
  • 1/3 cup olive oil
  • 1 clove garlic
  • 1 jar pimento
  • 1 tsp pepper
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tbsp capers
  • 1 tbsp chili powder
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 4 cloves
  • 1 can tomatoes either chopped or crushed

Directions:

  1. Heat olive oil. Saute diced garlic, onion and pimento. Add rest of ingredients. Simmer a short time and pour over fish. Bake until done. Good over snapper, king mackeral and sea bass.
