Ruby Red Chicken Salad

Ingredients:

Directions:

  1. In a medium saucepan, bring broth to a boil.
  2. Arrange chicken breasts in single layer in pan, and return broth to boiling.
  3. Cover and cook about 15 minutes, until chicken is cooked through.
  4. Drain and cool.
  5. Cut chicken into bite-sized pieces.
  6. Meanwhile, cook the pasta according to package directions, with 1/2 teaspoon salt.
  7. Drain and keep warm.
  8. In a large bowl, combine the chicken, cooked pasta, cooked peas, pimiento, grapefruit sections and reserved grapefruit juice.
  9. In a small bowl or jar, combine the oil, vinegar, garlic, cumin, salt and pepper.
  10. Mix well.
  11. Pour dressing over chicken mixture, and toss lightly.
  12. May be served cold, but immediate serving is better.
  13. Makes 4 generous servings.
  14. Note:I remove as much of the membrane around the grapefruit sections as Iyou can.
  15. This is a little bit tedious, but makes for a juicier, tastier result.
