Ingredients:

Directions:

  1. Bake potatoes at 425° for 45 minutes, or until tender.
  2. Cool.
  3. In a bowl, combine corned beef, sauerkraut, swiss cheese, scallions, garlic and horseradish.
  4. Cut potatoes in half lengthwise. Carefull scoop out potatoes, leaving just the skins of the potatoes in tact.
  5. In a bowl, mash potatoes with cream cheese.
  6. Stir in the corned beef mixture.
  7. Mound potato mixture into the skins of the potatoes.
  8. Sprinkle with parmesan cheese and paprika.
  9. Return to the oven for 30 minutes more, or until heated all the way through.
