Roman Spinach Chicken With Orzo

Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Marinate chicken in Italian dressing for at least 15 minutes.
  3. Cook spinach according to package directions, drain well.
  4. Remove chicken from marinade and drain.
  5. Saute garlic in oil over medium high heat.
  6. Add chicken and saute about 5 minutes or until browned on each side.
  7. Pour chicken broth into 8x8 baking dish and add chicken with garlic.
  8. Spread spinach around chicken, sprinkle with raisins and pine nuts.
  9. Top each chicken breast half with 1 oz mozzarella cheese.
  10. Bake uncovered for about 20 minutes at 350F or until chicken juices run clear.
  11. Serve chicken on top of orzo and sprinkle with Parmesan cheese.
