Roasted Veggies, Sausage and Pasta

Ingredients:

Directions:

  1. Preheat oven to 350 Fahrenheit.
  2. Cut the onion, red peppers, zucchini and tomato into chunks. Mince garlic.
  3. Place veggies and garlic in a large baking dish (glass or metal is fine) and drizzle with olive oil. Sprinkle with salt and pepper to taste.
  4. Cut uncooked hot Italian sausages into chunks and place in baking dish with veggies, toss well.
  5. Bake 350 for 30 minutes uncovered, toss occasionally. Add red wine and bake for 15- 20 more minutes.
  6. Cook pasta according to directions on the box.
  7. Toss pasta with veggies and sausage. Serve with sprinkled parmesan on top.
