Roasted Sweet Salsa

Ingredients:

  • 10 -12 large tomatoes, cut in 1/2
  • 3 -4 large tomatoes, diced
  • 4 jalapeno peppers (more or less depending on your heat wants)
  • 1 bulb of garlic (i like so you may want to use less)
  • 2 bunches green onions
  • 1 bunch cilantro
  • 1 lime
  • 2 tbsp honey

Directions:

  1. Start by putting the 1/2 tomatoes, peppers and bulb of garlic on the grill. Keep the tomatoes on until the skins fall off, but take them off before they get too mushy. I let the peppers and garlic on until they are blackened.
  2. Skin and chop the tomatoes up into a bowl.
  3. Skin and remove the seeds from the peppers (you can leave the seeds if you want it hotter).
  4. Mince the Garlic and add to the tomatoes.
  5. Finely chop and add green onions and cilantro.
  6. Cube the 3-4 fresh tomatoes and add.
  7. Squeeze in the juice of the lime.
  8. Add Honey to taste.
  9. Let chill for 3-4 hours.
