Roasted Shallots

Ingredients:

  • 6 tbsp. butter
  • 2 lbs. shallots, peeled , with roots intact
  • 3 tbsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions:

  1. Preheat the oven to 400
  2. Add shallots to boiling water and boil for a minute
  3. Remove skins
  4. Melt butter in skillet
  5. Add shallots and sugar and stir to coat
  6. Cook over medium heat 10 minutes or so, stirring occasionally, until shallots start to brown
  7. Add vinegar, salt and pepper and toss to coat
  8. Put pan in the oven and roast 20-30 minutes
  9. Sprinkle with parsley right before serving
