Roasted Pork Tenderloin and Vegetables

Ingredients:

  • 1 lb carrots, halved and cut into 2-inch pieces
  • 1 medium onion, cut into wedges
  • 1 tbsp olive or canola oil
  • 2 tsp italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Mix together salt, pepper and Italian seasoning. Rub pork tenderloin with 1 teaspoon of the olive oil, and sprinkle with 1 teaspoon of seasoning mix. Put vegetables into a large bowl and toss with remaining olive oil and seasonings. Arrange vegetables around pork. Bake, uncovered, at 450 degrees for 30-40 minutes or until a meat thermometer reads 160 degrees, stirring vegetables occasionally.
