Roasted Garlic Parmesan Mashed Potatoes

Ingredients:

  • 1 pint heavy cream
  • 1 bulb of garlic
  • 1/2 cup butter
  • 1 tsp olive oil

Directions:

  1. Peel and quarter the potatoes.
  2. Place potatoes in medium pot with cold water on high heat.
  3. Let boil until fork tender, drain, and return to pot.
  4. Grate the parmesan cheese.
  5. Cut the top of garlic bulb, cover with teaspoon of olive oil, wrap in tin foil, roast 450 degrees until soft.
  6. Pour the cream and add the butter to the potatoes and mash until smooth.
  7. Squeeze the garlic cloves out of the skin.
  8. Add the cheese, garlic, salt and pepper to the potatoes.
  9. Whip until well combined.
