Roasted Garlic and Tomato Dip

Ingredients:

Directions:

  1. Remove the papery outer skin from the garlic.
  2. Cut tops off of bulbs and brush with 1/2 teaspoon of olive oil.
  3. Wrap each bulb in foil.
  4. Place garlic and tomatoes on a foil lined baking pan.
  5. Brush tomatoes with remaining oil.
  6. Bake at 425 degrees for 30 minutes, or until garlic is softened.
  7. Cool for 15 minutes then squeeze garlic into a mixing bowl.
  8. Drain any liquid from tomatoes, chop, and add to garlic.
  9. Stir in cream cheese and seasonings.
  10. Serve with crackers.
