Roasted Corn, Black Bean and Mango Salad

Ingredients:

  • 1 tsp canola oil
  • 1 clove garlic
  • 1 1/2 cups corn
  • 1 1/2 cups black beans
  • 1/2 cup red onion
  • 1/2 cup red pepper
  • 3 tsp lime juice
  • 1 chipotle pepper , in adobo saude
  • 1 1/2 tsp fresh cilantro
  • 1/4 tsp ground cumin
  • 1/4 tsp salt

Directions:

  1. Heat oil in skillet over medium high heat.
  2. Add garlic and cook about 30 seconds.
  3. Add corn and cook until browned, about 8 minutes.
  4. Transfer corn to large bowel, stir in mango, beans, onion, pepper, lime juice, chipotle, cilantro, cumin and salt.
