Roast Pepper Spiced Cous-cous

Ingredients:

Directions:

  1. Pre-heat oven on HIGH.
  2. Chop peppers into 1 inch chunks.
  3. Chop onions into 1 and a 1/2 inch chunks.
  4. Mix the oil, Cumin powder and sugar with the vegetables.
  5. Roast in the oven for 1/2 hour - 45 mins unitl the peppers have charred slightly at the edges.
  6. For the Cous-cous:
  7. Put Cous-cous in a large bowl.
  8. Add the Cinnamon, salt and pepper and Garam Masala (if using) and mix well.
  9. Pour over enough boiling water to cover (usually the same volume, not weight, as the Cous-cous).
  10. Leave for 5-7 minutes until the Cous-cous is soft
  11. Stir in the Peppers and serve.
