Ingredients:

  • 2/3 cup margarine
  • 2/3 cup brown sugar
  • 2 cups flour
  • 2 lbs. ricotta
  • 4 eggs
  • 1 cup sugar
  • 1 tsp lemon zest
  • 1 tsp vanilla

Directions:

  1. Put margarine, brown sugar, and flour into bowl and cut with pastry blender to form pea size pieces. Add walnuts and mix.
  2. Press 2/3 of the above mixture into an ungreased 9 x13 baking dish.
  3. Bake in a 350 degree oven for 10 minutes. Set aside.
  4. Cream ricotta, eggs, sugar, lemon extract, zest, and vanilla.
  5. Pour over crust.
  6. Sprinkle with remaining crust mixture.
  7. Bake in 350 degree oven for 35 to 40 minutes.
