Ingredients:

  • 6 tbsp salad oil
  • 3 tbsp vinegar or 3 tbsp white wine
  • 1 tsp salt
  • 4 tbsp tarragon
  • 1/4 cup parsley
  • 1/2 cup green pepper , choped
  • 1/4 cup green onion
  • 1 cup cherry tomatoes

Directions:

  1. Cook rice and add first 4 ingredients while hot.
  2. When chilled, add parsley, green pepper, green onion and peas.
  3. Just before serving, add: 1 cucumber peeled and cubed and 1 cup cherry tomatoes.
