Ingredients:

  • crust
  • 1 cup. flour
  • 1/2 cup. (1 stick) cold butter
  • filling
  • 2 eggs
  • 3/4 cup. sugar
  • 1/4 cup. flour
  • 1/2 tsp. salt

Directions:

  1. Heat oven to 350 degrees.
  2. In a medium bowl, whisk together flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs. Pat evenly into the bottom of an 8-inch square baking pan. Bake about 15 minutes, until very lightly browned around the edges.
  3. In the meantime, mix together eggs, sugar, flour, and salt in another medium bowl. Stir in rhubarb. Pour mixture evenly over hot crust and bake 20-25 minutes, until rhubarb is tender (use a sharp knife inserted in the middle to test). Cool completely in pan set on a wire rack. Cut into 9 squares to serve and top servings with whipped cream or ice cream, if desired.
