Rhubarb Cobbler

Ingredients:

  • 5 cups fresh rhubarb, cut in 1-inch pieces
  • 1 1/4 cups sugar
  • 2 tbsp cornstarch
  • 1 tbsp butter
  • 1 dash nutmeg (optional)
  • 1 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 egg

Directions:

  1. Combine sugar and cornstarch; mix well.
  2. Add rhubarb nutmeg(optional), butter and grated orange rind.
  3. Let stand 10 minutes.
  4. Place in 9x9 baking dish.
  5. Bake in 375F preheated oven for 10 minutes.
  6. Mix cobbler topping ingredients and.
  7. Drop blobs of topping on fruit.
  8. Bake at 350F for 25 to 35 minutes.
  9. Serve warm.
