Ingredients:

  • 3/4 cup. sugar
  • 3 tsp.. baking powder
  • 1 tsp. salt
  • 1/4 tsp. baking soda
  • 1-1/2 cup. milk
  • 1/4 cup. cooking oil
  • 1/4 cup. lime juice
  • 2 tbsp. sugar
  • 1 tbsp. lime juice

Directions:

  1. In a mixing bowl, stir together flour, sugar, baking powder, salt and baking soda.
  2. Separately, combine milk, egg, oil, lime peel and 1/4 cup of lime juice and add to dry ingredients all at once; stir just until moistened.
  3. Turn into a greased 9X5X3-inch loaf pan.
  4. Bake in 350 degrees oven 1 hour
  5. Cool in pan 10 minutes
  6. Remove from pan onto rack
  7. Combine the 2 tablespoons sugar and the 1 tablespoon lime juice.
  8. Spoon over top of loaf
  9. Cool completely
  10. Wrap well and store overnight. Makes 1 loaf
