Ingredients:

  • 2 (10 oz) packages frozen red raspberries, thawed
  • 1 (3 oz) package raspberry gelatin powder
  • 2 1/4 cups sifted all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 1 cup milk
  • 3 eggs
  • 1 cup miniature marshmallow
  • whipped cream

Directions:

  1. Combine raspberries and gelatin,set aside.
  2. Sift together flour,sugar,baking powder and salt into a bowl.
  3. Add shortening,milk and eggs.
  4. Beat at low speed to blend.
  5. Beat at medium speed 3 minutes until batter is smooth.
  6. Arrange marshmallows in well greased 13x9x2 inch cake pan.
  7. Pour batter over marshmallows.
  8. Spoon raspberry mixture evenly over batter.
  9. Bake in 350 oven for 50 minutes or until cake tests done.
  10. Cool in pan.
  11. Serve with whipped cream or ice cream.
