Ingredients:

Directions:

  1. FILLING:
  2. Combine in a large saucepan 1/2 sugar, cornstarch, cinnamon and nutmeg.
  3. Stir in peaches and lemon juice, tossing until evenly coated.
  4. Preheat oven to 400 degrees F.
  5. Cook filling over medium heat, stirring constantly until mixture thickens and boils.
  6. Boil 1 minute.
  7. Pour mixture into an ungreased 2-quart casserole dish.
  8. Keep mixture hot in oven while you make topping.
  9. TOPPING:
  10. Combine flour, sugar, baking powder and salt in a medium bowl.
  11. Mix thoroughly, then cut in the shortening/butter until mixture crumbs .
  12. Add milk and stir until mixture is evenly moistened.
  13. Remove peach filling from oven.
  14. Drop dough onto peaches in six equal-sized spoonfuls.
  15. Return cobbler to oven.
  16. Bake 25 to 30 minutes OR until topping is golden brown.
  17. Don't forget that ice cream!
