Ingredients:

Directions:

  1. Melt butter in a saute pan.
  2. Add peppers and onions, saute until soft, about 3-5 minutes.
  3. Add rice, stir to coat.
  4. Add broth, salt, pepper and saffron, bring to boil.
  5. Cover reduce to simmer and cook 15-20 minutes, until liquid is absorbed.
  6. Stir in cheese, and chives, serve.
