from bon appetit, this makes a lovely side dish to fish or poultry
Ingredients:
5 tablespoons butter
1 1/2 cups chopped red peppers
3/4 cup chopped onion
1 1/2 cups basmati rice
3 cups chicken broth
salt, pepper to taste
1/4 teaspoon saffron, crushed
6 tablespoons grated parmesan cheese
3 tablespoons chopped chives
Directions:
1. melt butter in a saute pan.
2. add peppers and onions, saute until soft, about 3-5 minutes.
3. add rice, stir to coat.
4. add broth, salt, pepper and saffron, bring to boil.
5. cover reduce to simmer and cook 15-20 minutes, until liquid is absorbed.
6. stir in cheese, and chives, serve.
