Ingredients:

Directions:

  1. Melt margarine in large pot over medium heat
  2. Add onions, turning to coat.
  3. Cover and let sweat 8 minutes.
  4. Add garlic, stir to mix
  5. Cover and sweat another 1-2 minutes
  6. Add potatoes and mix with onion mixture
  7. Season with salt and pepper
  8. Cover and cook (without allowing too much color to potatoes) over gentle heat for about 10 minutes.
  9. Add hot stock
  10. Bring to a boil and simmer 25 minutes until veggies are tender
  11. Remove from heat and allow to cool slightly
  12. Puree the soup in batches in blender
  13. Reheat soup in pot, over low heat, to adjust seasonings.
  14. Add milk and additional garnishes and enjoy!
