Ingredients:

  • 3 cups red onions
  • 1 1/2 cups apple juice
  • 1 1/2 tsp rubbed sage
  • 1/2 tsp pepper
  • 4 cups sugar
  • 3/4 cup firmly packed light brown sugar
  • 1 (1 3/4 oz) package powdered fruit pectin
  • 1/2 tsp butter

Directions:

  1. Peel, quarter and thinly slice red onions.
  2. Measure 3 cups into a 6-or-8-quart sauce pot.
  3. Stir in apple juice, vinegar, sage and pepper.
  4. Measure sugars in a separate bowl.
  5. Stir fruit pectin into onion mixture in sauce pot.
  6. Add butter.
  7. Over high heat, bring mixture to a full rolling boil, stirring constantly.
  8. Quickly stir in sugars.
  9. Return to a full rolling boil and boil exactly 5 minutes, stirring constantly.
  10. Remove from heat.
  11. Skim off any foam with metal spoon.
  12. Ladle quickly into hot, sterilized half pint jars, filling to within 1/8 inch of tops.
  13. Wipe jar rims and threads.
  14. Cover with lids.
  15. Screw bands tightly.
  16. Process in a boiling water bath for 5 Minutes.
