Red Bulgur and Green Been Stew

Ingredients:

  • 5 cup water
  • 1 1/2 tsp salt
  • 1 medium eggplant, cubed
  • 2 tsp olive oil
  • 2 lb fish fillets
  • 1/4 tsp cipotle pepper, ground
  • 1 tbsp black pepper
  • 1 cup red bulgur
  • 2 1/2 cup additional water

Directions:

  1. First
  2. Boil 5 cups of water and salt to a rolling boil. Add green beans. Boil for 5 minutes.
  3. As green beans are boiling.
  4. Sautee eggplant and onion in olive oil for 5 minutes. When 5 minutes are up. Turn green beans down to low. Add sauteed onions and eggplant. Stir. Allow to simmer while cooking fish fillets for 4 minutes each side. Add all of the listed spices, Bulgar and additional water to the green bean pot. Stir and simmer while fish is cooking. After fish has cooked for four minutes on each side, add to Bulgar and bean mixture. add bay leaf and gently stir. Cover and simmer on medium heat for 10 minutes. Let stand for 5 minutes before serving. Be sure to remove Bay leaf before eating.
